The culinary talents of Justin Wise will be welcomed to Eureka 89 Events and Dining this month, where he will create the ultimate dining experience as newly appointed Consultant Executive Chef.
Towering above the city on the 89th floor of Eureka Tower, Eureka 89 offers a unique dining experience with 360 degree views of Melbourne through floor-to-ceiling windows.
Eureka 89 has employed the services of Wise – a highly experienced chef formerly of The Press Club, Maze and most recently The Point – to oversee all kitchen operations at Melbourne’s highest dining destination.
Determined to embrace his fear of heights, Wise will bring his extensive prowess to the skyscraper venue, developing evolving degustation menus and seasonal event menus throughout the year.
Wise will be working alongside a talented team at Eureka 89 including Renee Martillano, who has recently been promoted to Head Chef after two years as Sous Chef.
Jeff Salt will also be working with the team as a consultant sommelier, pairing the matched wines to accompany Wise’s impressive first menu at the sky-high restaurant.
Taking a classic approach to degustation dining, Wise’s first menu at Eureka 89 will include, amongst others, a beautiful Foie Gras and Sauternes dish, followed by Murray Cod with Southern Rock Lobster. Guests have the option of five or seven courses.
“Eureka 89 is a spectacular venue and I’m thrilled to be able to bring my own take on degustation dining to such a sensational setting,” says Wise. “The team and I are looking forward to taking the Eureka 89 experience to the next level.”
Wise’s new venture is an exciting chapter for the culinary industry in Melbourne, with his new menu launching early September.
